Keto in an Instant combines the well-known keto diet with the popular Instant Pot across a wide variety of recipes. Breakfast, dinner, appetizers, soups, dessert, and even salads are covered. Eating a ketogenic diet can be difficult for a beginner, and it can be exhausting trying to develop new meal ideas even for the seasoned keto dieter. I was pleasantly surprised to find a Filipino chicken adobo recipe in this cookbook. Adobo is one of my favorite foods and my Filipina friend cooks hers for hours and hours in her Crock Pot. To think that I could have adobo ready in just 20 minutes is a dream come true!

The design of this cookbook is foolproof. In a quick introduction, Stacey Crawford explains the keto diet and how it works. She also explains the Instant Pot. In the margin, she has included the number of servings, the actual serving size, prep and cooking time, Instant Pot cooking settings, and pressure-release settings, and ingredients. This information is very helpful if you are looking for quick or simple recipes. At the bottom, she has calculated the macros for each meal. Her recipes are true ketogenic options as the net carbs are minimal, unlike many other so-called keto recipes I have found.

The only recipe I feel was disappointing was the Scotch Eggs recipe. There is absolutely no seasoning at all. It would have been very easy to kick up the flavor in this recipe with a few simple spices.

Overall, this would be a great purchase for anyone who enjoys a keto or low-carb diet and owns an Instant Pot. Even without an Instant Pot, these recipes could easily be adapted for a Crock Pot or oven.
