Fantastic. An encyclopedic treatise , well articulated and described. A wonderful resource. I would love to have a copy, thankfully we have libraries. Extensively resourced and referenced.

The food being produced by this system is destroying the earth, destroying our health, destroying economic vitality, and robbing us of of our dignity by breeding dependency and reducing us to the subservient role of consumer.
We need to cultivate a different set of relationships….

If you are thinking about experimenting with fermentation, Katz's books are a really great place to start. The instructions are excellent and the stories and histories make for an interesting read.

So much information given in a fun and infectiously enthusiastic way. Loved the stories and will listen again to get more of the information. If you are interested in fermentation this is the best survey I know of.

I suspect this book will be referenced time and again as I get bolder with my fermentation experiments. There's so many interesting things I want to try!

It's a cookbook, so I didn't read the whole thing word-for-word. Katz starts off with a general introduction to fermentation in our culture, then gives really basic recipes that can easily be built upon. I've made mead and sauerkraut (and beets from before I got this book out). Fermenting vegetables is super-easy and I want to do it more to preserve foods at their peak. I got this book out of the library and will definitely be buying it.

Incredibly compelling; Katz just loves everything about fermentation culture and he's a good writer, putting in just enough anecdote to be readable without making one think "get to the point already". This book discusses fermentation and use of mould cultures, some of the oldest and safest methods of food preservation, in an incredibly comprehensive way, bringing in nutrition, cultural evolution, health, and practical information, including Katz's experiences with the process. It's roughly organised into sections by type - alcohol, vegetables, grains, meats, etc - but the nature of the topic is such that it's continually cross-referential. More, this book just makes me want to get out a knife and some vegetables and start a jar of something on the counter myself, connecting to the long lineage of humans who have done so before me, all over the world.
